Add Eggs to It! and Use Coconut Oil!

When I need a quick, easy, and healthy dinner, I chop a bunch of veggies and add eggs to it. This is especially kid friendly as the veggies are hidden. WaLah! You have dinner!

Yummy Veggie Eggs:

Chop this combination of healthy cancer-fighting ingredients:

garlic, onion, chopped broccoli, peppers, tomatoes, asparagus

Add sea salt and pepper.

Heat 1 tbsp of coconut oil to a STAINLESS STEEL OR IRON skillet (I’ll tell you why I don’t like  “non-stick” in a later post)

Add veggies to heated oil and saute’ for 4-5 minutes. Add 2 cage-free organic eggs per person. Cook on medium heat moving the spatula around so the veggies and eggs don’t stick. Remove when the egg’s consistency is to your liking and serve.

Cooking with coconut oil is much better than other fats and the components of it are highly favorable for fighting cancer! This is a much healthier fat to cook with it due to its higher smoking point. Other oils can put off free radicals during its oxidizing process if it is heated past its smoking point. Free radicals may contribute to the risk of cancer.

If you are interested in buying coconut oil for cooking or for adding to your smoothies, I recommend buying it in a dark, glass container. Enjoy!

  1. I apologize for my original typo on this post. I accidentally said to cook the dish on a “non-stick” skillet! I am 100% against any non-stick cookware as it is covered with TEFLON. I will write more about the harmful effects of Teflon in a later post. Sorry for any confusion!
